Got up with instant relived feeling of: I am not late for work, it’s weekend! Next thing: starving and a very few left over ingredients in the fridge have to save me: Chorizo, Eggs, Courgette and Tomatoes. Usually my quick fix with Chorizo is something like this recipe. But having no potatoes, following method is what I did:
Chopped and fried the Chorizo to release its oil and smoky flavor. Skinned and chopped a couple of tomatoes finely. Left to soften. Grated some courgette and let it to its magic of making everything feeling a bit creamy and cosy. Ripped some basil leaves and added some olive oil. Poached two eggs, everything on top of toast.As for drink : some frozen pears turned into a delicious refreshing smoothie.
