Nigel Slater, Light supper

A while ago, on Good Food channel I saw Nigel Slater cooking this incredibly simple and mouth watering, vegetarian light supper. I recreated the recipe on the same day ( a lovely sunny day it was! ) and had it as a Sunday brunch. Today, whilst working on my “Persian lamb stew”, I decided to have a quick post of Nigel Slater simple supper. Unlucky me couldn’t find the recipe on line. But its so simple you can figure it out through these photos.

Lightly fry the 3 ingredient together- keep them firm and fresh

Here place them on a toast. I used the healthy rye bread
