Before I begin writing about Uttappam let me say: all the blogs that I follow ” You guys rock!” totally amazing. So glad that I am involved in this foodies world. Fantastic! Who needs food magazines when there are people like you out there!!
Now for my contribution:
Thanks to a lovely Indian colleague we had I was introduced to a dish called Uttappam, that has become one of my favourite things to eat at the moment. It’s made of fermented rice-Urad dal batter ( Gluten-free) topped with chopped onions, tomatoes and chilli served like a flat bread or a pizza. When served the dough has the inviting smell of sourdough, it’s very soft and a bit stretchy. The topping is a bit crunchy. You rip a bit of this amazing bread and dip it in a chutney of your choice. Traditionally it’s coconut chutney.
I know I am using a ready mix pack here, that’s not what foodies do! But baby steps here one at a time. I still felt freaking cool going to an ethnic shop and looking like I know what I am doing!
- Uttappam ready mix ( It contains : rice flour, lentil flour, salt, bicarbonate soda, citric acid, green chilli , ginger powder, Fenugreek seeds powder- mine makes about 4 plate-size uttappam and was about €2!)
- Chopped Onions
- Chopped Tomatoes
- Chopped Green chilli
- Coriander (optional)
Follow the instruction on the back of the packet. To get an idea this is what my one says:
- Mix the content with water, makes smooth batter.
- Oil a pan, pour 1/4 of the batter at a time, form a thick pancake, sprinkle with your chopped vegetables and herbs.
- Dot the edges with a little oil and cook till golden brown. Carefully turnover and cook more.
- Serve hot with chutney or chilli powder.
Totally enjoyed my lazy evening bite, but I must say the ones in restaurants are nicer than this ready mix. No surprise there I guess. If you live in Dublin Medina Desi and Ambala do pretty amazing ethnic Indian and Pakistani dishes. Cheap as chips (and much more tasty). Just go with it and enjoy the food!!
